Saute:
5 strips of bacon
1 onion, diced
1 cup celery, diced
Add:
4 cups of water
3 cups cubed potatoes
Cover and bring to a boil. Simmer until potatoes are tender (about 20 min.)
Add:
1 can evaporated milk
1 tsp chopped parlsey
1 tsp salt
1/4 tsp pepper (season to taste)
Thicken with a rue or Ulta Gel Gel (can buy at Macy's)
Serve with grated cheese and top with extra bacon as desired.
